Springtime Meringue Cookies

This is one of my favorite recipes for just about anytime of the year. It is remarkably simple and makes a ton of delicious, low-calorie treats. Plus, it’s so simple to flavor and make your own so I’m including two springtime variations!

Forgotten Chips Cookies
2 egg whites
1/8 tsp cream of tartar
2/3 cup sugar
1 tsp vanilla
1 cup semi-sweet chocolate chips

  1. Preheat oven to 375 F. Lightly grease cookie sheet. In small mixer bowl, beat egg whites with cream of tartar and salt until soft peaks form. Gradually add sugar, beating until stiff peaks form.
  2. Carefully fold in vanilla extract and chocolate chips. Drop mixture by teaspoonfuls onto prepared cookie sheet. Place cookie sheet in preheated oven; immediately turn off oven and allow cookies to remain in oven six hours or overnight without opening door.
  3. Remove cookies from cookie sheet. Store in airtight container in cool, dry place. Makes about 2 ½ dozen cookies.

Hugs & Kisses Variation (Love Magick)
Replace 1 tsp vanilla with 1 tsp rosewater
Add 2-4 drops red food coloring

BFF Variation (Friendship Magick)
Replace 1 tsp vanilla with 1 tsp lemon or orange extract (you can also use juice but the flavor will be stronger with an extract)
Add 2-3 drops yellow food coloring (lemon) OR
Add 2 drops yellow food coloring and 1 drop red food coloring (orange)

  1. The instructions call for salt, but the recipe doesn’t list an amount. I only ask because these sound interesting and I want to try making them.
