Kitchen Witchery: December Gingerbread

In honor of the first day of one of my very favorite months… the most delicious gingerbread you have ever tasted!! This recipe was clipped from a magazine many moons ago and I still swear by it. On a witchy note, the combination of cinnamon, ginger and allspice makes for a very lucky winter treat while the molasses helps steel you for the hectic holiday season ahead.


2 cups all-purpose flour
2 tsp baking soda
1 tsp cinnamon
½ tsp salt
½ tsp ginger
½ tsp allspice
1 cup olive oil
1 cup molasses
1 cup sugar
3 eggs
1 cup boiling water

  1. Preheat oven to 350 F. Grease a 13×9 inch baking pan. Set aside.
  2. In large bowl, sift together flour, baking soda, cinnamon, salt, ginger and all-spice. Set aside.
  3. In another large bowl, combine oil, molasses, sugar and eggs. With electric mixer on medium, beat 3 minutes, until blended. Add dry ingredients, beating until smooth and well-blended. Quickly stir in boiling water. Pour into prepared pan.
  4. Bake 35-40 minutes or until cake tester inserted in center comes out clean. Cool in pan.
